Freezer Meals

Over the past few days I have been in freezer meal HELL!!!! Freezer Meals are no joke people! It is hard and exhausting. I am doing freezer Meals main for breakfast and dinner. I am trying to ensure that my boys get good solid meals everyday. I am not a milk and cereal kind of mom or a “lets stop and get fast food.” I cook full on meals for every meal. Not that I am against cereal and fast food but thats just not what I want for my kids. I grew up eating whatever I wanted at all times. My mom didnt get up and cook our breakfast or make our lunchs, so we ate whatever we wanted. And dinner time was even worse! When my parents were still married my dad did the bulk of the cooking and he is a meat and potatoes kind of man, I fed mine to the cat. And after they divorced my mom worked most nights so again we were left to feed our selves, frozen pizzas or Little Caesars were on my menu. And now look at me, Im fat. Up until the first of this year I ate horribly!! Soda, chips, candy, to of pizza, large portions, etc. But I finally got sick of me. I got sick of never having energy. And I got sick of being a complete fat ass!! Yeah I was still smoking hot but I was a fat ass!! Now I am a bit less of a fat ass, I lost 32lbs! I have kicked 95% of my bad eating habits and I feel so much better. I don’t want to teach my boys the bad eating habits that I grew up with. Now many would say that I am a bit of a nazi about what they eat but I don’t care. They only get; milk, water, and 100% juice to drink….sometimes G is allowed to have lemonade. I do rarely give them candy….unless I need to bribe them! I will allow them to have usually one “treat” a day, whether it be a sucker, animal crackers, oatmeal cream pie, etc. And yes when we are at parties and function they are totally allowed to be like other kids and have cake, cookies, ice cream. But pretty much I am just trying to give them a…..’basic structure’ for their eating habits. And they do, they eat very well. My kids will eat just about anything I place in front of them, except asparagus! The rule is, you eat what I make or you do not eat! There are exceptions to the rule; if they try it and truly do not like it, I will not make them eat it but they have to take at least 3 bits to make sure that they do not like it. If I am making something that I know is out of their ‘heat index’ then I will make them a more mild version or something else. Other than that, you eat what I make or you do not eat. Ok with all of that being said, I made freezer meals! I started out on Pinterest looking at what others were making and how they organized the process. After doing my research I made lists, lots of them! I make a list of everything I wanted to make and the ingredients in those. Most of the meals that I chose to make were things that I knew everyone in the family liked. I cook for a lot of people so choosing meals is sometimes hard. But just like the boys, if they do not like what I make then they do have to eat it. I have said to my mom and my sister many times “I am not a short order cook. If you don’t like what I am making then cooking your own dinner!” So after I chose what to make I went shopping…in all the compound fridges, pantries, and freezers, there are 5 homes on the compound. I wanted to utilize what we already had and what needed to be used. Now my mom is a couponer/hoarder so we did have a lot. If she shes meat on sale she will stock up and freeze it. After I raided all of the houses I made a new list of the foods that I was going to make because of some of the item I had found. Then I made a shopping list. I took the meats out of the freezer to thaw on Monday and gathered all the other item I needed from everyone’s houses, and also went to the grocery store. On Tuesday I went to Sam’s and bought disposable aluminum foil pans, lids and gallon freezer bags. Now I did not do an amazing job at the store, there were many things that I did not buy enough of or I managed to leave off the shopping list. On Wednesday I woke up and got started! I cooked from 9 am till 10pm! I made about 50 freezer meals. The first thing I did on Wednesday was to figure out what meats needed to be cooked and to get them on. Then I got my soups on, because they have to be cooked completely and then cooled so that they can be put in bags and frozen. And that was about the end of any kind of rhyme  or reason. I most certainly could have planned all of this out a lot better!!! But for my first time it wasn’t awful!

Ok so here is what I made and I guess the recipes, I don’t really use recipes so pretty much the ingredients.

BBQ Brats and Peppers

  • Brats- doesnt matter what kind. And use as many as you think your family will eat.
  • Peppers- all colors cut into chunks.
  1. I put all of this in a disposable pan and yep thats it! This is an easy one.
  2. You will put the cooking directions on the lid so that if someone else gets them out they know what to do with them.
  3. I did not add the BBQ because I felt that it would be best for the meat to cook a bit before the BBQ was added. So on the cooking directions I put “Cook on 400 for 45 min with lid, add BBQ and cook 20-30 minutes without lid.”

Turkey Meatloaf/Beef Meatloaf

  • Meat- I made one turkey and one beef
  • ketchup
  • brown sugar
  • milk
  • eggs
  • salt- sea salt
  • pepper
  • onion
  • ginger
  • crackers
  • mustard
  1. Combined everything except ketchup, mustard, and brown sugar
  2. put the ketchup, mustard, and brown sugar in the bottom of a disposable meatloaf/bread pan
  3. add meat mixute
  4. put on lid
  5. don’t forget direction
  6. freeze


  • smoked sausage
  • shrimp
  • diced tomatoes
  • sea salt
  • chicken broth
  • jambalaya mix- uncle bens
  • a few shakes of chilli powder
  1. Put everything except mix in a bag
  2. freeze it
  3. all of this will go in to crock pot for 8 hours on low or 4 on high
  4. add mix
  5. cook 30 more minutes on high

Chicken Tortilla soup

  • chicken
  • corn
  • rice
  • onion
  • rotel
  • black beans
  • chicken broth
  • sea salt
  • pepper
  • a bit of tomato paste
  • cheese
  • tortilla stripes
  1. cook the chicken
  2. add all of this to a pan and cook
  3. add chicken
  4. let cook for about an hour
  5. let cool
  6. freeze

Pot Pie

  • chicken
  • mixed veggies- I used frozen
  • onion
  • cream of chicken
  • milk
  • sea salt
  •  pepper
  • bisquick
  • cheese
  1. cook chicken
  2. mix; veggies, chicken, milk, cream of chicken, onion, salt and pepper
  3. put in a disposable pan
  4. mix; milk, bisquick, and cheese
  5. pour over veggie mix
  6. I baked it for about 5 minutes just to let them crust set so it didn’t seep into the veggies.
  7. let cool
  8. add cooking directions

Poor Mans Dinner/Sheppard’s Pie

  • Meat- I made a beef and a turkey
  • potatoes
  • corn
  • french cut green beans
  • onions
  • cheese
  • frenches french fried onions
  1. I boiled my potatoes first thing in the morning so the could cool and I could cut them.
  2. Layer in a pan; meat, onions, sliced potatoes, cheese, green beans, and corn
  3. Add cooking directions “Bake 400 for 50 minutes without lid. Add Frenches and bake 10 more minutes

Beef Stew

  • Roast
  • red potatoes
  • carrots
  • purple onions
  • beef broth
  • beef stew mix
  • onion soup mix
  1. Cut up veggies and add everything to a freezer bag

Broccoli and Carrots- side dish

  • broccoli
  • carrots
  • chopped garlic
  • honey
  1. add broccoli, carrots, and garlic to a freezer bag
  2. cooking directions “steam for 10 minutes. Add honey, serve”

Orange Glazed Carrots- side dish

  • baby carrots
  • OJ
  1. add to freezer bag

Chicken Teriyaki

  • chicken
  • carrots
  • red onion
  • pine apple
  • garlic
  • teryaki sauce
  • chicken
  1. add it all to a bag and freeze

Steak Fagitas

  • steak- I use whatever is on sale! It cooks for so long that even cheap steak turns out great
  • beef broth
  • rotel
  • jalepenos
  • peppers
  • onions
  • fajita shells
  1. add everything but peppers and onions to a bag and freeze.
  2. cooking directions “cook in crock pot on low for 6 hours. Add peppers and onions. Cook 30 more minutes.

Burrito Stuffing

  • Meat- I did beef and turkey
  • corn
  • spanish rice
  • taco seasoning
  • rotel
  • cheese
  • taco sauce
  • lettuce
  • burrito shells
  1. Cook meat
  2. add seasoning and rotel
  3. cook rice
  4. mix meat mixture, rice and corn
  5. Add to freezer bag
  6. cooking directions “thaw and heat. Add sauce, cheese, lettuce. Roll in shell,”

Southwest Burger Patties

  • meat- beef and turkey
  • Kraft southwest mix- found in the refrigerated section by the cheese
  1. Mix it all and make patties
  2. Freeze with wax paper between

Parmesan Asparagus- side dish

  • EVO
  • asparagus
  • parmesan
  1. Add it all to freezer bag

Baked Spaghetti

  • whole wheat pasta
  • sauce- I used prego 3 cheese
  • italian sausage
  • mozzarella cheese
  • parmesan cheese
  • onions
  • beef
  1. Cook pasta
  2. cook beef
  3. let cool
  4. add everything in a pan and freeze

Italian Sausage Bake

  • Italian Sausage
  • peppers
  • red onions
  • cherry tomatoes
  • red potatoes
  1. add it all to a pan
  2. freeze
  3. Cooking directions “Bake at 400 for 2 hrs.”

Stuffed Shells

  • pasta shells
  • sauce
  • ricotta
  • spinach
  • italian sausage
  • motzerella
  • parmesan
  • italian seasoning
  1. Cook the shells, aldente
  2. mix remaining ingredients
  3. stuff shells with mixture
  4. put in pan and add sauce
  5. sprinkle with cheese

Balsamic Glazed Pork Loin

  • pork loin
  • sage
  • garlic
  • water
  • pepper
  • brown sugar
  • corn starch
  • balsamic vinegar
  1. Add it all to a bag and freeze
  2. Cooking directions, ” Crock pot on high for 4 hours.’

Azzo Con Pollo

  • chicken
  • salt
  • pepper
  • peppers- all colors
  • garlic
  • corn
  • chicken broth
  • diced tomatoes
  • brown rice
  • onion
  1. slightly cook chicken
  2. add everything to pan and freeze
  3. Cooking directions “add chicken broth, cook 350 for 30-40 minutes.”

I also made extra cookies and cookies dough when I was making them for Bryse’s birthday. You have to have goodies also!Image



Now it’s late and I need sleep! I will try to get to the breakfast food tomorrow while the boys are napping! Oh and please excuse an grammatical errors that you found in this. Kara Leasure did not proof read my paper!
